Burger or Hot Dog Buns Recipe

This is the best bread ever!!!!!! Not just for burgers and hot dogs; but excellent for sandwiches. We also make dinner rolls to surprise our guests. We absolutely love them. My husband let the dough to rise about an hour. Then when he makes the buns, he let it rise about 20 more minutes; and then is perfect to go in the oven.
Long story short, we retired and moved to Italy. My husband is from NJ, and has been pining for Sabrette hog dogs for two years. Our cousin, The Saint, stuffed a lunch bag with ice packs and managed to get 30 dogs here, from OH, still icy cold. After that act, I HAD to find the perfect recipe for buns. This is the second recipe I've tried, and it's the last. The buns came out great, thanks to the hot milk, water, and butter starter. They are soft and tender inside, and out. I also made an egg wash, with milk instead of water, to brush on just before they went in the oven. It's true, as said before, they do come out a tad big. I stayed around 130 grams, but will go down to about 110 for the next batch. In my oven, 200 C was a bit hot, and left them light on top and very brown on the bottom. So, I put the second baking sheet in at 200C, then turned it down to 180C after about 5 minutes. Perfect. My husband's reaction, upon his first bite was, "Oh, mmmm, mmmmmm." I was jealous. I'm afraid the hot dog buns didn't work well for me, a little too textured and fell apart easily. I think that it would have been better if I had tried the hamburger bun shape instead.
First, let me say that I am not the best cook for making bread. Now, the buns were delicious, I forgot to add the egg, and the hamburger rolls still came out fluffy! I had a hard time making the hot dog buns, but the family at them with butter instead. I would make these again, but this time add the egg :). Good recipie.
